I have learned the following pronunciation rules. Are they true?
É = closed “E” sound just like “O” (épluché)
È = open “E” just like in Egg (trés)
Ê = open “E” same as È (fenêtre)

No, É, È and Ê sound the same, like in the English word EGG.
The variation of these sounds can come from the sequence of the letters inside different words.
What is most important for you is to make a clear differentiation between E (the œ sound explained in the webinar) and É (like in the word EGG – with accent aigu or any other accent), which is what changes the meaning of the words.
Also, writing the pronunciation into phonetic writing is very deceiving, and only hearing them would clarify my answer.
