It’s one of the must-have experiences in this lifetime, especially if you’re a hopeless francophile.
I must confess, even I had the best Galette just a couple of days ago.

Saturday, we went to Douce France, a coffee shop in town, to taste the best Galette.
Christel imports the flower, the butter and every spice from France, and for that reason her pastries are lighter and more filling than you can imagine.
We had two slice each for brunch – two! – and we didn’t to eat anything else for the day, nor did we feel bloated or too full, and the taste wasn’t too sweet or too… anything.
It was perfect!
What are the origins of la Galette des rois?

What is the recipe?
And now the goodies!
Ingrédients :
2 disques de pâte feuilletée
2 oeufs
1 jaune d’oeuf
100g de sucre
80g de beurre
125g d’amandes en poudre
1 pincée de sel
eau
1° Préchauffez le four à 200°C.
2° Sortez vos pâtes feuilletées du réfrigérateur pour qu’elles soient à température ambiante.
3° Mélangez deux oeufs avec le sucre. Battez-les pendant 2 minutes environ.
4° Ajoutez le beurre à température ambiante. Mélangez, puis ajoutez les 125 grammes d’amandes en poudre et une pincée de sel. Mélangez bien le tout.
5° Mélangez un jaune d’oeuf avec une cuillère à soupe d’eau.
6° Dessinez un cercle avec le jaune d’oeuf à l’aide d’un pinceau au bord de la première pâte feuilletée.
7° Étalez la frangipane au centre de la pâte.
8° Recouvrez avec la deuxième pâte. (Mais avant, n’oubliez pas la fève !)
9° Soudez les bords et avec le dos d’un couteau, vous pouvez faire des dessins sur la galette avant de l’enfourner.Vous pouvez aussi badigeonner votre galette avec le jaune d’oeuf restant pour lui donner un peu plus de couleur.
10° Enfournez pendant 25-30 minutes.
